After a spring and summer of planting, weeding, watering and general garden maintenance, we were excited to have had a bountiful harvest. Some of our third grade students and fifth grade students were able to harvest cucumbers, eggplants, squash, beans, corn, tomatoes, as well as many other vegetables. We used our own vegetables to make recipes such as ratatouille, mild and hot salsa, and vegetable soup. Even our picky eaters were willing to sample our recipes with enthusiasm. We learned that freshly picked vegetables taste great!!
